Bread Crumbs

This may be a silly question, but does anybody know how to make bread crumbs? I am making chicken cutlets and I am tired of store bought variety. Bread crumbs should be easy right?

This is not a silly question at all. Sometimes the simplest things can prove to be elusive. Here’s how I do it.

What you Need:

  • Two baguettes of French Bread
  • 1 hunk of brie cheese (any good cheese will suffice)
  • Time
  • Food Processor
  • Seasoning (salt, pepper, Parmesan, herbs…)

What you Do:

  • Smear cheese on one loaf of bread and consume. Note that wine is an excellent compliment to this meal.
  • Let second loaf dry out on the counter. (this can take a day or two or three.)
  • Break the loaf into smaller pieces so it fits into the food processor.
  • Chop the heck out of the dry bread.
  • Season with herbs, salt, pepper and Parmesan.
  • Store excess in the freezer for a rainy day.

If you need some in a hurry and haven’t planned ahead, and all have is fresh bread ill-suited to crumbs, you can accelerate the ‘staling’ by throwing the loaf in the oven for a while and then blitzing it in the food processor.

Thank you. The bread crumb suggestions were very helpful. I now buy an extra french loaf from our baker just for bread crumbs. Some days he has day old bread for $1 which is perfect.
