Lemon mint iced tea

This is an ideal drink for a warm summer afternoon. If possible try and consume from a plastic glass while casually floating in a gently heated swimming pool.

Ready

  • 2 tea bags ( I prefer PG Tips)
  • juice of ½ large lemon
  • ¼ cup sugar
  • Sprig of mint (8-12 leaves)
  • lots of ice

Set

  • Teapot
  • Large pitcher (tempered glass or heat resistant)
  • Large Spoon
  • Swimming pool (optional)

Go

  1. Bring approximately 1 liter of water to boil.
  2. Add tea bags and mint to empty pitcher. Add the boiling water and let seep for three (3) minutes and then remove tea bags.
  3. Add sugar and lemon.
  4. Taste and adjust.
  5. Once all the sugar is dissolved fill remainder of pitcher with ice.
  6. Serve and enjoy.

What you should know

I like PG Tips which is a British brand that is now easy to find in the US. In my opinion it is well suited to iced tea. Feel free to improvise and use your favorite brand of tea.

Refreshing. This recipe makes me want to request mint with my iced tea everywhere I go. My niece (Sophia) and I really enjoyed the swimming pool too.

I had lunch with a friend who ordered a fresh mint lemonade and a glass of ice tea. She proceeded to mix the two to make a fresh lemon mint ice tea.

I should have pointed her to this recipe as a much healthier option!

A word of warning — make sure your pitcher is tempered glass or can otherwise handle the heat. That beautiful pitcher in the picture above, alas, is no more. It was not tempered glass. I made a big mess.
