There are times in every cooks life when all they want is good pizza in a nice pizza parlor. And for those of you lucky enough to live within close proximity of one of the three restaurants of the Pitfire pizza company you count your blessings one pie at a time.

The owners make it clear that this is not fast food. They endeavor to serve you in a timely manner but strive to fulfill their vision of “a table where friends could gather to share in the foods we love.”

Essentially what the owners have done is taken the grease out of pizza parlor. They endeavor to use local and seasonal ingredients and this commitment pays off when the pizza hits the table. They had an heirloom tomato pizza that was the next best thing to the one I make at home. Granted they have one distinct advantage in the form of a beautiful wood burning oven that is the envy of home cooks the world over.

And you have to give a restaurant credit when they have the common sense to list their purveyors at the farmer’s market front and center on their website. No wonder their heirloom pizza rivals mine, they source their heirlooms from the same market as I do. I give them credit for living up to their philosophy and going out of their way to support the local organic farmer.

Usually in pizza parlors I avoid the obligatory limp salad but even the salad was crisp, well apportioned and flavorful.

So if you simply aren’t up to cooking tonight or your looking for a simple treat to share with your family, give Pitfire Pizza a go. Be sure to spend some time at the table savoring the meal.

Pizzeria Mozza may be getting all the attention in town, but those celebrity chefs better take a good look in the the rear view mirror as Pitfire has renewed the good old fashioned pizza parlor and at a fraction of the price.

I couldn’t agree more with this recommendation. I thought to add two things. First, the prices are reasonable bordering on really good value. Second, the roast vegetables are yummy (just ask my daughter).
