To E or not to E?

I noticed on Lionel’s brief but elegant story — ‘Scotch’ — and the comments which follow, whisky is spelt with and without an ‘e’. I think GreatGrub should establish, once and for all, the correct spelling for whiskey.

It is spelled right, though it is correct to use either spelling. “Whisky” refers to whiskies of Scottish origin. Whiskey with an “e” usually refers to Irish orgin.

This is what I thought, but I have noticed recently a number of scotch whiskeys/ies use an ‘e’: Ballantines for example.
