Avocado on toast

This morning, while one of my daughters was tucking into the usual bowl of over-sugared cereal, another daughter chose an altogether healthier, and somewhat surprising, alternative.

I watched as she diligently prepared the ingredients and tucked into a breakfast that is good enough to eat at any time of the day (or night).

Years ago, I worked on a farm that grew avocados. In season, we used them like butter, spread on everything.


  • Avocado
  • A lemon
  • Bread for toasting
  • Salt and pepper


  • Toaster


  1. Toast the bread.
  2. Half the avocado and scoop out its flesh and spread it liberally on the toast. Don’t be neat.
  3. Squeeze some lemon over the avocado mess and season with salt and plenty of cracked pepper.
