Fig Newton Bars

Fig newtons are best homemade. This is best when figs are in season. This makes about 35-40 cookies.

Ready

Filling:

  • 1 Cup Figs
  • 1 ½ Cup Water
  • 1 Cup Apple Juice
  • ¼ Cup sugar
  • ⅛ tsp grated orange zest

Dough:

  • 4oz. (1 stick) butter, softened
  • ½ Cup Vanilla sugar
  • ½ tsp orange zest
  • 1 large egg white
  • ½ vanilla extract
  • 1 ½ Cups flour

Set

  • Medium or large sauce pan
  • Mixer with paddle attachment
  • Spatula

Go

Filling:

  1. Combine all ingredients except orange zest in medium saucepan and bring to a boil. Reduce heat to a simmer and continue cooking 1-2 hours until figs are soft and spreadable.
  2. Transfer to food processor with blade and add zest and process until smooth. Allow to cool.

Dough:

  1. In mixer with paddle attachment, Cream butter, Vanilla sugar, and orange zest.
  2. Scrape down sides and add egg white and Vanilla extract.
  3. Add in flour and beat on low speed until dough comes together
  4. Wrap in plastic and refrigerate for 2 hours.
  5. Preheat oven to 350ยบ. Line baking sheets with parchment or Silat.
  6. On floured surface, roll dough out to approx. 12x16 rectangle.
  7. Cut into 4 equal strips, each 12x4.
  8. Spoon filling down center of each strip and fold dough over filling and pinch edges together.
  9. Place on prepared cookie sheet, seam-side down.
  10. Bake 12- 15 minutes, rotating sheets halfway through. until golden.
