Pig around a Blanket

Most everybody has heard of “pigs in a blanket” but now the “pig” has got the upper hand! These rolls are great to eat on their own or with a warm winter meal.

Makes a dozen.

Ready

  • 4 cups flour
  • 1 envelope dry yeast
  • pinch of salt
  • 1 ⅔ cups hot water
  • 12 lean bacon strips
  • 1 egg, beaten

Set

  • Bowl
  • Ramekin
  • Measuring cup
  • Baking sheet lined with parchment or Silpat mat
  • Cutting board
  • Pastry brush

Go

  1. Pour a little of the hot water into a ramekin.
  2. Add yeast to dissolve (about 5 minutes).
  3. Place flour, yeast mixture and salt into bowl and stir together.
  4. Add a little water and mix.
  5. Add remaining water and using your floured hands, mix and pull dough together.
  6. The dough will be a little sticky.
  7. Turn dough unto a lightly floured surface and knead for about 5 minutes, or until the dough is smooth and elastic.
  8. Divide dough into 12 even pieces and roll into elongated cylinder.
  9. Place a slice of bacon on cutting board and run back of knife down its length to stretch it slightly.
  10. Wrap around one of the “rolls”.
  11. Repeat until all are wrapped.
  12. Place on prepared baking sheet.
  13. Set aside in warm place and let rest (about 30 minutes) until they have doubled in size.
  14. Preheat oven to 400°F.
  15. Brush with egg whites.
  16. Bake for 20-25 minutes, or until they have cooked and browned.
